Utiel-Requena (w/o D.O.) - Los Pedrones - Valencia Primarily Garnacha with smaller complements of Bobal and Royal, from very old organically-farmed vineyards. Vatting and foot-treading in stone lagares for 10-15 days, followed by de-stemming and transfer to stainless steel. Spontaneous fermentation with indigenous yeast. The wine is left to decant in stainless steel over the winter before before transferred to used French oak for six months of additional élevage. Bottle unfined and unfiltered with a small addition of sulfur. 3000 bottles produced.
