This sparkling is produced from three varieties (Pinot Noir, Riesling, Grüner Veltliner) selected from different sites of the estate. Grapes from Heiligenstein, Gaisberg, Grub and Lamm are harvested at the right moment, laid in small boxes and are immediately pressed. After six months of élevage in cask, it is bottled. 

Try it with game birds, pork ribs, or wild mushrooms. It is also the perfect pairing for pickled and fermented foods.
